Pappu Dal is my mother's recipe. A South Indian red lentil dish that has nourished families for generations. Eight ingredients. No seed oils. No allergens. 14 grams of fiber and 12 grams of protein from whole lentils and spices. Add water. One pot. 30 minutes.
Just add water
Rinse the red lentils and soak in cold water for 20 minutes. Walk away. There is nothing to do during this time.
Drain the lentils. Add the lentils, spice packet, and water to a medium saucepan. Bring to a boil, then cover and simmer. Still mostly hands-off.
Over rice, with roti, or in a bowl on its own. A squeeze of lemon and a pat of ghee are optional but wonderful. Four people fed.
