Rinse and soak the lentils, 20 minutes hands-off

Rinse the red lentils and soak in cold water for 20 minutes. Walk away. There is nothing to do during this time.

Add everything to a saucepan with water

Drain the lentils. Add the lentils, spice packet, and water to a medium saucepan. Bring to a boil, then cover and simmer. Still mostly hands-off.

Serve. One pot to wash.

Over rice, with roti, or in a bowl on its own. A squeeze of lemon and a pat of ghee are optional but wonderful. Four people fed.
