Ingredients:
- 1 pound chicken (thighs preferred, but breast works too)
- 2/3 cup whole fat Greek yogurt (plus 1/2 cup for finishing)
- Kay's Omni Masala spice (2 tablespoons or 1/2 packet for a less spicy version)
- 2 knobs of butter (plus more if desired)
- 1 cup canned tomato sauce
Instructions:
1. Marinate the Chicken
Combine chicken, 2/3 cup whole fat Greek yogurt, and Kay's Omni Masala (adjust spice level as desired). Marinate for at least 20 minutes or overnight.
2. Cook the Chicken
Heat oil in a pan, stir-fry marinated chicken until golden, then set aside.
3. Sauté the Onions
Add butter to the same pan, sauté diced onions until golden and softened.
4. Create the Sauce
Add canned tomato sauce and another knob of butter to the pan. Stir to combine.
5. Simmer and Incorporate Chicken
Return chicken to the pan, simmer in the sauce for 10 minutes. Add more butter if desired.
6. Finish with Creaminess
Stir in 1/2 cup Greek yogurt to make the sauce creamy. Adjust seasoning to taste.
Serve and Enjoy
Serve hot with basmati rice or naan for a perfect meal.
