I Challenged Myself to Cook "Real Food" for 30 Days.

Here is The Grand Finale (Days 22-30).

We made it! After 4 weeks of cooking, planning, and discovering new ingredients, I have officially crossed the finish line of the 30-Day Real Food Challenge.

The final stretch was all about "Better Than Takeout" comfort food. I stopped focusing on "rules" and started focusing on the meals that make me feel happiest—which, unsurprisingly, involved a lot of crispy vegetables and warm curries.

Here is the lineup for the final 9 days.

I started the final stretch with a crunch. Lotus Root (Kamal Kakdi) is an underrated vegetable. I stir-fried thin slices with plenty of garlic and cracked black pepper. It’s like eating savory chips, but significantly healthier and packed with fiber.

Classic Poha

The ultimate 10-minute Indian breakfast. Poha (flattened rice) is light on the stomach but keeps you full thanks to the peanuts and veggies. I made mine the traditional way with turmeric, mustard seeds, and a squeeze of lime. It’s "fast food" done right.

Sprouted Chana (The Return)

If there is one ingredient that defined this challenge, it’s Sprouted Chana. It appeared again on Day 24 because it is simply the best vegetarian protein source I have. Whether in a salad or a stir-fry, having these prepped in the fridge saved me from ordering out.

Capsicum Paneer Curry

Friday night called for takeout, but I made this instead. The sweetness of the bell peppers pairs perfectly with the soft paneer in a rich, golden gravy. No heavy cream, no food coloring—just real spices and real flavor.

Dal Tadka

The food that feels like a warm hug. A simple yellow lentil soup tempered with ghee, mustard seeds, and dry red chilies. It’s humble, inexpensive, and proves that the most nutritious meals are often the simplest.

Edamame & Black Sesame

I needed a snack that wasn't just "empty calories." I steamed shelled edamame and tossed them with black sesame seeds. The seeds add a nutty crunch and a boost of calcium, turning a plain snack into a powerhouse.

Chema Dhumpa (Taro Root) Fry

Move over, potatoes. I roasted Chema Dhumpa (Colocasia) with spices until it was incredibly crispy. This veggie is a gut-health hero, packed with resistant starch that feeds good bacteria. It’s the "smart" way to eat fries.
