The Mediterranean Bowl (With a Sprout Twist)

We started strong with a fresh Tabbouleh. I kept it classic with plenty of parsley, red onions, and de-seeded tomatoes to keep the texture right. But instead of standard garbanzo beans, I used homemade sprouted chana for better digestion and extra protein. I paired it with creamy hummus and some seed crackers for crunch.

Loaded Berry Oatmeal

Breakfast doesn't need to be complicated. I tossed oats into my Cuckoo cooker (hands-off cooking is a lifesaver) and topped them with fresh berries and banana. The secret weapon? I added a savory-meets-nutty kick with a spice blend containing sesame seeds and seaweed. It sounds unique, but it adds such a great depth of flavor compared to just plain sugary oats.

"Dad’s Style" Indian Omelette

This is a special one—my father’s style omelette. The rules are simple: No cheese. Instead, it gets its flavor from red onions, spicy Thai green chilies, and if I have them on hand, fresh curry leaves. I season it with salt, turmeric, and chili powder—because why not? Served with half an avocado and a side of homemade sprouted alfalfa for that fresh crunch.

Instant Pot Palak Paneer

I needed comfort food fast. I made my quick Instant Pot version of Palak Paneer. It’s the perfect way to get a massive amount of greens in while still feeling like you're eating a rich, cozy meal. I also added Kabuli Chana (chickpeas) to boost the protein and fiber content.

The Sprouted Power Breakfast

I’ve been loving making my own sprouts at home - it’s such an easy way to level up a simple meal. This was a classic "bullseye" egg on toast, but I layered it over fresh homemade alfalfa sprouts and served it with a side of sprouted beans and avocado. It’s texture heaven.

Soul-Soothing Pappu Charu

When you’re feeling a little under the weather or just need a warm hug in a bowl, this is it. Pappu Charu is a tangy stew similar to Sambar, made by simmering lentils with mixed vegetables like bottle gourd and eggplant. You can eat it as a soup on its own, or serve it over rice for a full meal.

Homemade Jalapeño Hummus

We celebrated the one-week mark with a fridge staple: Homemade Creamy Jalapeño Hummus. It takes about 5 minutes in the blender and tastes way better than store-bought. Having a good dip on hand makes snacking so much easier.
