Tofu Biryani is one of our boldest kits, and the Instant Pot is the best way to cook it. The pressure does two things at once: it drives the spices deep into the tofu and cooks the rice perfectly without any babysitting. 8 minutes on high pressure and you are done.
This recipe uses the Kay's Curries Tofu Biryani Kit, which includes basmati rice, a marinade spice packet, and a biryani spice blend. You provide the tofu, oil, and water.
What You Need
- 1 Kay's Curries Tofu Biryani Kit
- 1 block extra firm tofu (14 oz), drained
- 2 tbsp cooking oil (avocado or coconut recommended)
- 1.5 cups water
Prep time: 3 minutes
Cook time: 8 minutes (plus natural release)
Serves: 4 to 6
Instructions:
Step 1: Drain and cut the tofu
Drain the tofu block and press out the water before cutting. Cut into bite size pieces and place in a bowl.
Step 2: Marinate the tofu
Add the marinade spice packet from the kit and 1 tbsp oil to the tofu. Gently coat all pieces so the spice covers every side. Set aside.
Step 3: Saute the biryani spices
Set the Instant Pot to Saute mode. Add 1 tbsp oil, then add the biryani spice blend from the kit. Saute for 30 seconds, stirring constantly. Do not let the spices burn.
Step 4: Add the tofu and rice
Add the marinated tofu and the washed and drained rice from the kit. Mix everything together gently.
Step 5: Add water and seal
Turn off Saute mode. Add 1.5 cups of water. Close the lid and set the valve to Sealing.
Step 6: Pressure cook
Set to Pressure Cook, High Pressure, 8 minutes.
Step 7: Natural release
When the timer finishes, let the pressure release naturally. Do not quick release. The rice needs the steam to finish cooking evenly.
Step 8: Serve
Open the lid, fluff with a fork, and serve. Add a squeeze of fresh lemon or a side of yogurt or dairy free yogurt to balance the spice.
Tips
- Press the tofu for 10 to 15 minutes before cutting if you want a firmer texture. Wrap it in a clean towel and place something heavy on top.
- Wash the rice until the water runs clear before adding it. This removes excess starch and prevents clumping.
- The natural release matters. Quick releasing a rice dish causes uneven texture and can leave the bottom layer undercooked.
- Soy chunks or paneer work as alternatives to tofu at the same quantity.
Serving suggestion
Serve with a side of yogurt or dairy free yogurt to balance the spice. A squeeze of fresh lemon also works well.
