The kit includes a marinade spice packet that coats the tofu before cooking and a biryani spice blend that layers into the rice. You provide the tofu. The word Biryani is derived from the Persian word Birian, which means fried before cooking, and Birinj, the Persian word for rice. Traditionally, Biryani is cooked over charcoal in an earthen pot. Plant based biryanis have a long history across South India, where vegetables, paneer, and legumes are layered with rice and spices in the same tradition. This kit brings that tradition to tofu, using Kalpana's mother's spice blend to give the tofu the same depth of flavor as the original.

However, the finished dish contains soy because you add tofu. If anyone at your table has a soy allergy, this kit is not suitable.   9. Can I use something other than tofu? Yes. Soy chunks (also called textured vegetable protein) work very well and absorb the marinade beautifully. Paneer is a great option if you are not vegan. Keep the same quantity, about 1 lb, which is what the kit is designed for.
  10. What type of tofu works best? Extra firm. Drain it and press out the water before cutting. Silken or soft tofu will fall apart during cooking.
  11. Is it good for camping? This kit works best for home or Instant Pot cooking. The tofu needs refrigeration and the marinating step needs a bowl and space. For camping, the Vegetable Biryani or Masala Kichadi are faster and more compact.
  12. Does it come in a smaller size? No. Most tofu blocks sold in stores are 1 lb, so the kit is designed around that. One kit, one block, serves 4 to 6.
  13. How do I make it less spicy? Serve with yogurt or dairy free yogurt on the side. You can also use less of the marinade spice packet, or add a squeeze of lemon while cooking to cut through the heat.

Every Kay's Curries kit traces back to my mother's kitchen in India. She never made tofu biryani. This one is mine.
