Wash and Prep: Wash and drain the rice and lentil mix thoroughly; set it aside.

Sauté Spices and Vegetables: Set the Instant Pot to Sauté mode on the "Less" setting. Add 2 tablespoons of oil and let it heat up. Once the oil is hot, add the spice mix and vegetables from the packet, and stir for about 1 minute until fragrant.

Add Rice and Lentils: Pour in 3 cups of water, followed by the washed rice and lentil mix. Cancel the sauté mode.

Pressure Cook: Close and secure the Instant Pot lid. Turn the pressure valve to the Sealing position. Set the Instant Pot to Rice mode at High Pressure for 12 minutes.

Quick Release and Rest: When cooking is complete, use Quick Release to release the pressure, and let the dish sit for 5 minutes before opening the lid.

Serve: Fluff the rice and lentils gently, and serve hot.
